Program for a Molecular Cuisine Cooking Class
Intermediate level
Duration: 3 hours
- Learn the basic principles of molecular cuisine
- Sperimentare con diverse tecniche di cucina molecolare
- Create tasty and innovative dishes
Introduction (30 minutes)
- Presentation of molecular cuisine
- Demonstration of some molecular cuisine techniques
- Discussion of ingredients and equipment
Practical part (2 hours)
- Spherification – Preparation of sodium alginate spheres with different fillings
- Gelling – Creating jellies and gels with agar agar
- Emulsion: preparation of sauces and foams with emulsifiers and siphon
- Flavoring: Infusion of flavors with marinating, smoking and infusion techniques
Tasting (30 minutes)
- Tasting of the dishes prepared during the cooking class
- Discussion on the results and possible applications of molecular cuisine
Recipes:
- Olive spheres
- Tomato jelly with basil
- Foams and airs (salty, sweet, alcoholic)
- Smoked animal protein (meat/fish).
