Immerse yourself in five days of authentic Tuscan flavors, where tradition meets modern taste. Each day focuses on a different theme — from handmade pasta to countryside meats, coastal seafood, rustic desserts, and a complete menu — offering a full-spectrum experience of Tuscan cuisine. This hands-on course blends culinary practice with cultural insight, ideal for anyone seeking a true taste of Tuscany.
Program Overview:
Day 1 – Fresh Pasta
- Noodles of the Locumon (Tagliatelle with Artichokes)
- Testaroli with Pesto
- Crepes of Caterina de’ Medici
Day 2 – Meat and Poultry
- Thrush (or seasonal game bird) with Juniper Berries
- Rabbit with Apples
- Pork Loin in Sea Salt Crust
Day 3 – Seafood Specialties
- Drowned Baby Octopus
- Stuffed Calamari with Pecorino Romano
- Cacciucco (traditional Tuscan fish soup)
Day 4 – Desserts with a Tuscan Touch
- Crème Brûlée of Pecorino Toscano
- Fresh Fruit Tart
- Cantuccini
Day 5 – Complete Tuscan Menu (participant’s choice)
- Menu 1: Liver Terrine with Apples and Pistachios – Spinach & Ricotta Ravioli – Guinea Fowl with Pomegranate – Marcella’s Apple Pie
- Menu 2: Croutons with Mixed Vegetables – Chickpeas & Radicchio Soup – Pork Fillet with Mushrooms – Chestnut Crêpes
Course Details:
Duration: 5 consecutive days (daily at 2:30 pm, approx. 3 hours per lesson)
Format: Small groups (max 5–6 participants), fully hands-on (nothing pre-prepared), guided step by step by the Chef

Booking: €200 deposit to reserve your spot; €500 balance due upon arrival at the school
