TUSCANS AT TABLE

TRADITION IN THE POT OF MODERN TUSCANY

Every day of the week is dedicated to a course of the meal, ranging from ancient to modern dishes. Monday is the day of the first courses; meat and poultry on Tuesday; fish on Wednesday; sweets and desserts on Thursday. On Friday a full menu will be performed, chosen by students between the two proposed by the school. Each participant will receive the book with the recipes and an apron.

Sillabus:

  • Monday: Tagliatelle with artichokes - Testaroli with pesto - Crepes of Catherine de' Medici - Pici with sausage
  • Tuesday: Quail juniper - Chicken estruscan style - Rabbit with apples - Pork in a salt crust
  • Wednesday: Drowned Octopus - Red mullets Livorno style - Stuffed calamars - Cacciucco
  • Thursday: Creme brulée of Tuscan Pecorino - Fresh fruit pie - Biscuits with almonds - Roasted chestnuts/Boiled chestnuts/Marron glacé
  • Friday: A menu to choose between the two proposed:
MENU 1: Thin chickpeas pie with rosemary and black pepper - Liver terrine with apple and pistachios - Ravioli with spinach and ricotta cheese - Guinea fowl with pomegranate - Marcella's apple pie
MENU 2: Croutons with mixed vegetables - Chickpeas soup with radicchio - Pork fillet with mushroom - Crepes with chestnut flour
